Sweet temptation: buckwheat muffin lambada

You will need:

  • 300ml of buckwheat flour
  • 3 tablespoons of brown unrefined sugar
  • 2 teaspoons of baking powder
  • 1 teaspoon of cinnamon
  • 150ml. of milk (or plant based milk)
  • 1 teaspoon of vinegar
  • 50ml of boiled and mashed pumpkin
  • 1 pear
  • 50ml of olive oil
  • 1/4 bar of dark chocolate + a splash of milk
  • A handfull of sprouted buckwheat and berry mix “Buckwheat Lambada”

Mix sugar, flour, baking powder, cinnamon. Then pour milk, vinegar, mashed pumpkin, olive oil and mix well. The mixture should be as thick as sourcream. Cut the pear into small pieces and combine with the mixture. Put the mixture in muffin cases with a spoon and bake for 25min. in 180 degree preheated oven. Break chocolate into small pieces and pour the milk, then melt everything on a low heat. Pour this sauce on the muffins when they are ready and scatter som “Buckwheat lambada”.
